Tubeless wheelsets for Trail riding?

650b, non Carbon.

I've seen some Stans Arch EX rims on DT Swiss 350 hubs with Sapim spokes at a good price (with Shimano/SRAM 8/9/10 speed freehub)

As Robert said the superstar wheels are great value and switch hubs are pretty much future proof
If you fancy getting a set made look at merlin cycles, brilliant service and fantastic wheels and loads of options

Was only on them for a few months before I got my new bike and went for carbon wheels. I liked my Eastons for the silent free wheel and UST rim, no rim tape or sealant needed so it took out the equation going tubeless which was nice. Although that said, now I have my technique down I would say tubeless is no big thing, but I did get upset with it at the start. took them to shops and they couldn't do it proppely, eventully I took the challenge on myself.

I thought you still needed the sealant even with UST? (To fill and block puncture holes)

For those that are using the Superstar AM Carbon rims, do you have any issues using them tubeless?

They get a great review here

Some tyres go on easily others don't. My Mud X went on the rim easily, a Dirty Dan didn't, Mountain Kings went on not too bad but one on the rear leaked through the sidewalls for weeks.

Every tyre is not the same as the one that came out of the mould before it, and between brands there is a difference. Usually once you've had them on once and used them they go on a lot easier subsequent times.

If they went on the rim too easily I'd worry they would leak air whilst under stress, so if it takes a bit more effort to put them on so what you're going to spend hours of enjoyment riding them before you have to do it again.
